Pita is a general term for round, flat bread made from wheat flour and yeast, commonly found in the Mediterranean,
Middle East, and surrounding regions. Unlike the pocket-style pita used in many Arab countries, Greek pita bread does not have a pocket.
The origins of pita are ancient. Around 14,500 years ago, during the Stone Age, the Natufians in what is now Jordan are
believed to have made an early form of flatbread using wild grains. By 4,000 years ago, in societies such as Mesopotamia’s
Babylonian culture, bread had already become central to daily life, with some of the earliest written records and recipes
devoted to bread-making.
In Greece, pita is often simply brushed with olive oil, sprinkled with oregano, and eaten with various dips. It is also
commonly used for souvlaki, a popular Greek fast food.
EVOIKI ZIMI
Evoiki Zimi was founded in 1984 in Psachna, on the island of Evia, under the name “Zimarika Psahnon.”
It began as a small, family-run business where experienced women prepared pasta by hand, faithfully following
traditional recipes and using only the highest-quality ingredients.
In the 1990s, the company expanded into the production of frozen dough products and relocated to its own factory in
Kastella, Evia.
As the company grew, part of the production was transferred in 2004 to a new, modern facility in Dokos–Chalkida.
By the late 2010s, Evoiki Zimi established another production unit in Chania, Crete, operating under the brand names
“Zimarika Psahnon” and “Zimi Psahnon.”
Under these brands, Evoiki Zimi has energetically expanded its distribution network, gaining new customers both
throughout Greece and abroad.
